Pick the Right Apple
The variety changes the dish.
Almost any apple eats fine out of hand. Cooking is where the choice starts to matter, and swapping a sauce apple into a pie is how you end up with filling instead of slices.
All 19 varieties are scored tart to sweet, with best uses on every one.
Not sure where to start?
The sweetness chart puts every variety on one scale, so you can find a substitute that behaves the same way.
