Filter by what you have.

Pick a product, a use, or both. Bought a bag of cherries and not sure what to do with them? Start there.

Before You Start

The apple you pick changes the dish.

Almost any variety is fine eaten out of hand. Cooking is where it starts to matter.

Pie and tarts

Tart varieties that keep their shape and their acid through heat. Mixing two beats using one.

Sauce and butter

You want apples that break down. McIntosh collapses almost on its own, which is why it is the classic.

McIntosh, Cortland, Paula Red

Salads and slaws

Firm flesh that holds up under dressing, with enough acid to cut through cheese or something rich.

Honeycrisp, Pink Lady, Braeburn

Crisps and crumbles

Enough structure to survive a long bake without turning to liquid under the topping.

Ida Red, Jonagold, Golden Delicious

Cook What Is Ready

The best recipe is whatever is in season.

Michigan asparagus runs six weeks in late spring. Sweet cherries open around the Fourth of July and are gone by mid-August. Peaches and prune plums land in August. Apples start in mid-August and run through the following spring out of storage.

Fruit picked at peak and moved fast needs less from you in the kitchen. That is the whole argument for cooking seasonally, and it is not a romantic one.
